Right, but... What are those Structured Data?

Oversimplifying, there are 2 levels of information on the WWW:

  1. Unstructured in the form of content that humans like you and us can read and understand. We can give words a meaning upon context, human is a variable.
  2. Structured as contained in standardized formats to be read by computers. It has strict syntax rules and controlled vocabularies.

A Search Engine computer system needs strict standards for structured content which should validate against a universal format in order to "understand" user's search intent and the other way round, what your website is about in a very detailed and kinda fool-proof style. Google, Bing, Yahoo, Yandex and others are founding members of the workgroup responsible for the standard used to structure the information. What is their interest in doing this effort? Because they want us to use this standard so their search engines may work better and evolve into the "understanding" of what people is looking for (or offer, in your case). No longer enough for them to discern repetitions of keywords and analyze the relationships between documents, they need to move from words to things: words are ambiguous to be used very flexibly by humans, however, things are concrete and perfectly definable or disambiguated by means of the above strict and universal standard.
This arrangement is the standard known as Schema

So we can speak of "speed" and will be a simple text string with multiple meanings that depend on a human context (somewhat ambiguous) in which a machine cannot catch the search intent, it will realize that a user is interested either in drugs, physics or a song title. We can talk about "Barcelona" and humanly decide the meaning based on the context or (addressing to Google) define "Barcelona" as an ENTITY of a particular type, with specific ATTRIBUTES and standardized RELATIONS.
